Happy Last Week of May!

Our countdown to the big move has begun… so I am slowing for a bit on the work front and revving up the packing!

Here are two recipes I tried this weekend that were a huge success with the fam as we were sorting through our hoarded treasures.

The first is a MEXICAN SHRIMP COCKTAIL. Uses lots of fresh veggies and chunks of cooked shrimp… cool and perfect for hot summer days.  Check out the recipe on SIMPLY RECIPES here!

The second is a delicious Lemon Blueberry Ricotta Pound Cake also from Simply Recipes.  Use less butter and add ricotta cheese. Really really delicious. We were tempted to have seconds…
